Hey there again, another week has just passed like that.
I'm starting to feel that I've lost the momentum to blog ever since I've been so swarmed up with uni-work related stuffs. Anyhow, I'll try my best to make it a habit to blog once or twice a week since after all, I've got a new layout for my blog, which means, I can't allow my blog to go back to the abandoned state that it used to be before this whole new transition.
On the brighter note, I can't exactly tell you how excited I am in looking forward to the next weekend (after this coming one), hehe. Because yours truly is finally making a trip down to London! Also, the sister would be paying a visit somewhere in the middle of next week before we head down to London together to reunite with the little brother! *jumps in joy*
Honestly, I'm really amazed at myself for not having to travel anywhere so far this semester, after being back in Manchester for almost close to 5 weeks.. This is an achievement for me, totally. I think I should keep up with this, because staying in Manchester could only mean that more productive work is being done consistently.
At the same time, amidst of all the hectic workload from my coursework deadlines, dissertation project, postgraduate studies applications and possibly even preparation for GMAT test in the coming weeks, I have also taken the initiative to fork out some time to pamper & treat myself. I would say, this whole new LDR experience that I am going through right now with the puggy is really teaching me a lot of things, things that I have missed out on quite a bit before this. By now, I can't say that LDR is possibly the worst thing ever because I am genuinely feeling happy with an immense amount of Me-time at present :)
So how did you guys spend your weekend?
I can't deny the fact that 24 hours is seriously starting to feel like it's not entirely sufficient for me. But well, all I remembered what I did during my past weekend was having some catchups with my friends in Manchester, shopping (again, to de-stress of course.. which is totally acceptable in my opinion), meeting a friend who came from Sheffield for a day, working through my existing coursework as well as flipping some hot cakes on a late Sunday afternoon. Yeap, that basically sums up my entire weekend! I'm pretty sure your weekend plans would sound 10x much more interesting than mine. Ha ha..
& if you don't mind, I'm just going to go with some random pictures for this post today.

I present you, my Gluten Free Banana Pancakes topped off with organic honey, and to go with some mixed berries.
Another picture of my masterpiece. Haha, can't say that I'm quite happy that it all turned out alright when I haven't been flipping pancakes for awhile now, not since after second year has ended. :p
Well, if you're interested in trying out this recipe, it's really pretty simple! It doesn't even require any eggs.. since it's Gluten Free :) So, I'll just share the recipe of mine for this particular pancake that I've made on Sunday with you guys here, feel free to give it a try.
You'll need the following ingredients for this:
1. Gluten Free Flour | 1 cup
2. Baking Powder | 2 tbsp
(I've used a Gluten Free baking powder in particular)
3. Banana | 1
(Preferably ripened)
4. Almond Milk | 1 & 1/4 cup
(I've used the Almond Drink from Rude Health which is Organice, GF, and Unsweetened)
5. Stevia Sweetener | 2-3 drops
(You can always substitute this with Coconut Sugar etc)
Steps:
1. Just add the flour & baking powder in a bowl.
2. Then in a separate bowl, mash the banana and add the almond milk and mix them well together.
3. After that, add the wet ingredients to the dry ones and blend them until smooth. In this case, I've just poured everything into my NutriBullet blender and blend them until everything is smooth.
4. Finally, heat your pan with a little Coconut Oil to avoid sticking and add your desirable portions of the pancake batter on to the hot pan.
Then, voila!
Your very own Gluten Free Banana pancakes are ready to be served. Before that, just add any toppings that you like or fruits as the sides to go with your pancakes :p
p/s: Note that this particular recipe is sufficient for one person!

Satisfied my lobster pasta cravings at Don Giovanni's restaurant along Oxford Road last Friday with my friends. Well, it's not really the best but this would suffice for now!
I hope the start of the week for all you has been a great one so far.. Let's just keep up with the great effort and work that we're putting into our studies and everything else until the weekend approaches again, hehe. For now, I'll have to stop here because if I go on any further, I think I'll just be neglecting the supposedly work that I should be making a start on now already...
