HELLO GUYS!
...How has your week been so far?
Anyway, I'm back again! After my previous post which was quite depressing (for me, sort of), I'm finally back to my usual self. Haha, at least that's what and how I feel now.. So I guess nothing else really matters as long as you feel good about yourself ultimately, right?
Alright, alright.. Aside from that, I have also been back on track with my so-called "healthy" lifestyle ever since I came back from London.. Tried making pancakes on one of the mornings, as well as preparing overnight oats with chia seeds. I will try to make it a habit to share the recipe or post pictures up of my breakfast/lunch or whatever once in a blue moon, IF I feel that you guys might be interested in, heh. So, if anyone is really interested in having a go with overnight oats + chia seed puddings, you can always try the following recipe which I've adopted for my version the other day..!

All you need is:
- 1 cup or 1 & 1/2 cup rolled oats depending on personal preference (preferably non-milled ones)
- 2 tbsp chia seeds
- 2 cups unsweetened almond milk (I usually use Rude Health. It's GF, Vegan and organic)
- 1-2 tsp sweetener of your choice (I go for organic honey in this case. It's always better to go less sweeter first if you're unsure of how sweet you would like it to be because you can always add extra sweetener the next morning when you're having them)
...& You're almost done! Just give them a good stir in your glass jar and they are ready to be kept in the fridge for them to do its work (Y).
In the morning when you're having them, just take them out and serve them with any choice of your toppings. So far, I've tried mine with the following:
- kiwis
- bananas
- goji berries
- cacao nibs
- & a spoonful of my favourite almond butter!!
Well that was really simple, isn't it? Give it a try, if you're a breakfast person & would love to save your time in preparing one in the morning, especially if you're in a rush or something.
p/s: The size of my glass jar is a 500ml jar. I personally feel that even half or a 3/4 of the servings from the size of my jar would be more than enough as my breakfast portion!

Not sure whether you've seen my pancakes recipe before this, but I've posted one of them before last year around October if I'm not wrong. Have a scroll back if you want!
I'm quite lazy at the moment to write up the same recipe again :p Hehe. Anyway, aside from the toppings, every ingredients is just the same as before. This time, I topped my pancakes with fresh strawberries & vanilla coyo (which is coconut yoghurt) that I got from the organic store here in Manchester + drizzled them with some organic honey.
That's just it! Easy & healthy :D Definitely guilt-free pancakes, heh.

On the other hand, I was really glad to have been invited by Dior Manchester again for another special event at their boutique in Selfridges yesterday for the celebration of Chinese New Year. It was yet another lovely and wonderful experience.. A photographer from Paris and afternoon tea-like settings at the shop were certainly the kind of ambience that I needed to make my day :) I'm just going to let the pictures do most of the talking, so help yourself!
They set up afternoon tea stands at the boutique store yesterday.. We were also given bubble teas! Hehe, haven't had these in awhile!

After the event, Adelyn & I headed to Umezushi and waited for Nicole to join us for dinner. It's impressive how the food at Umezushi never fails to disappoint you every time when you come back after awhile.. Coming back to this place each time could just bring back so much memories.
Especially since my first year until now, I've seen such tremendous improvements in terms of their service, food and everything else. Certainly, it's like I've been there with the restaurant when it first started (even when it looked really run down back then) right until now. Okay, I sound like I'm so deeply fond of the place, but yeah honestly, I wouldn't resort to anywhere else for Japanese food in Manchester besides Umezushi. Not even the latest Japanese restaurant which is Sakana could weigh up to the quality of food served here at Umezushi. Well, that's my verdict (definitely not being biased or anything). Not sure about yours, but I wouldn't really be bothered since all of us are gifted with different tastebuds (Sorry but not sorry. Haha)
We ordered two portion of sashimi's ranging from scallops, salmons and their otoro! I was surprised by how yummy their fatty tuna was last night! It was really my first time having the chance to taste something like that here at Umezushi. (TWO-THUMBS UP!)

The Una don that I finally decided to try instead of my usual Taiwanese pork rice. Hehe. It tasted not bad, but I believe that there are still room for improvements for this particular dish!
Just managed to take two pictures out of the rest of our dishes that we ordered. Hehe. Everything else just went straight into our mouths :X
It was nonetheless a lovely night out to be surrounded with great people and friends. Certainly am glad that I have made the right decision in coming out last night for attending the event as well as having dinner with the girls to catchup after so long :)
